Oxygen molecules in the cell naturally split in the process of turning food into energy. This split results in two molecules called “free radicals”, each with only one electron. These free radical molecules need TWO electrons, so they scavenge other oxygen molecules for a second electron. Our bodies supply naturally occurring molecules that will give an electron to these free radicals without becoming one themselves. We call these giving molecules “antioxidants”. If we become depleted in these “giving” antioxidant molecules, the free radicals will take electrons from molecules that cannot afford to give one up.
